The synthetic flavoring 3-acetyl-2, 5-dimethylthiophene has a roasted, nutty smell and has been used as a food flavoring since 2002. However, in 2013, the European Food Safety Authority (EFSA) issued a reassessment opinion on the substance, which concluded that it showed mutagenic properties in both in vivo and in vitro tests, and posed safety problems for its use as a food flavor, and removed it from the list of flavors in food in Appendix I of the Flavors Regulation.
